A fragrant and refreshing fizz that combines juicy plum, aromatic rosemary, and delicate elderflower for a beautifully balanced cocktail.

Ingredients

  • 45 ml Gin No.20 (Plum, Cassia Bark & Muscat Root)

  • ½ Plum, sliced into chunks

  • 1 Sprig Rosemary (plus extra for garnish)

  • 15 ml Elderflower Cordial

  • 60 ml Sparkling Water

  • Ice Cubes

  • Garnish: Fresh Rosemary Sprigs and Plum Slices

Method

  1. Muddle: In a cocktail shaker, add the plum chunks and rosemary sprig. Gently muddle to release their flavours.

  2. Add liquids and ice: Pour in the gin and elderflower cordial, then add ice cubes.

  3. Shake: Shake well for 15–20 seconds until chilled and combined.

  4. Strain and build: Strain into a glass filled with fresh ice cubes.

  5. Top and stir: Add the sparkling water and stir gently to mix.

  6. Garnish: Finish with a fresh sprig of rosemary and a few slices of plum for a beautiful, aromatic presentation.

Serving Suggestion

Serve in a highball or Collins glass. Perfect for warm days or anytime you want a crisp, floral fizz.
