Ingredients

45 ml Gin No.20 (Plum, Cassia Bark & Muscat Root)

½ Plum, sliced into chunks

1 Sprig Rosemary (plus extra for garnish)

15 ml Elderflower Cordial

60 ml Sparkling Water

Garnish: Fresh Rosemary Sprigs and Plum Slices

Method

Muddle: In a cocktail shaker, add the plum chunks and rosemary sprig. Gently muddle to release their flavours.

Add liquids and ice: Pour in the gin and elderflower cordial, then add ice cubes.

Shake: Shake well for 15–20 seconds until chilled and combined.

Strain and build: Strain into a glass filled with fresh ice cubes.

Top and stir: Add the sparkling water and stir gently to mix.

Garnish: Finish with a fresh sprig of rosemary and a few slices of plum for a beautiful, aromatic presentation.
