Ingredients

  • 50 ml London Dry Gin from Have A Cracking Easter Tin
  • 60 ml apricot nectar (or fresh apricot juice)
  • 20 ml freshly squeezed lemon juice
  • Soda water
  • Ice

Garnish

  • Fresh Apricot Slice

Method

  1. In a shaker, combine gin from Have A Cracking Easter Tin, apricot nectar and lemon juice with a handful of ice.
  2. Shake well to chill.
  3. Fill a highball or short Collins glass with ice cubes and strain the mixture into the glass.
  4. Top with soda water and garnish with a fresh apricot slice or a lemon wedge.
