Ingredients

  • 50 ml Gin No.17 (Sage, Fig & Thyme)

  • 15 ml Fresh Lemon Juice

  • 3–4 Fresh Sage Leaves

  • 1 Sprig Fresh Rosemary

  • Ice Cubes

  • Simple Syrup (to taste, approx. 10–15 ml)

  • Soda Water (optional, for topping)

  • Garnish: Fresh Sage Leaf or Lemon Peel Twist

Method

  1. Muddle the sage: In a cocktail shaker, gently muddle the sage leaves to release their flavour.

  2. Add the liquids and ice: Add the gin, lemon juice, simple syrup, and a handful of ice cubes to the shaker.

  3. Shake: Shake well for 15–20 seconds, or until thoroughly chilled.

  4. Strain and serve: Strain the mixture into a glass filled with fresh ice.

  5. Top with soda (optional): Add a splash of soda water if you prefer a lighter, sparkling version.

  6. Garnish: Garnish with a fresh sage leaf or a twist of lemon peel for aromatic appeal. A rosemary sprig can also be used for a more pronounced herbal note.
